		<description>to answer your question ..its about the onions juices or the liquid in them ...after you cut or crush the fiber of the onion it release a liquid that becomes a gas ,this gas goes into your eye membrane and irritates it causing you to cry ..the chemical name is sulfur dioxide , most television  cooks and you too can slow the process down ..by cooling or freezing the onion before you chop it . it turns the liquid of the onion in a frozen state and makes it  harder to become a gas, this way you can chop onions and not cry ..also as a benefit you can chop onions like the pros do since now they are firm and much harder ,your knife will not slip around and the cuts can be made more exact ..mine you, gaining  good knife skills is still a kitchen plus, you do not want to haul out a food  processor for all the slicing ,chopping and dicing you will do everyday to create a meal ..
